Every payday I get myself something nice for lunch, once upon a time this was a kebab or a burger... something with bread in other words. :) Once I went gluten free, my main two options in town were a salad from Subway or a 'healthy box' (basically a kebab without bread in a little takeaway box) from the local kebab shop. I know somewhere in town there are other options, but finding them is a problem, plus I've found many salads even have croutons or dressings added with mystery ingredients. I prefer to play it safe rather than guess and get sick - from long and unpleasant experience!
This was my alternative, buying ingredients and whipping up my own tasty lunch (more effort but much tastier). It uses one of my favourite, recently-discovered ingredients, corn tortillas.
I started out by slicing some haloumi cheese and frying it in a pan until brown and crisp on the outside.
Then I got to work on the tahini sauce, here's the (very easy) recipe.
Tahini yoghurt sauce
1/2 cup plain or Greek yoghurt
2 tsp tahini (hulled or unhulled is fine)
1 tsp crushed garlic
Salt and pepper
Mix ingredients together in a bowl and season to taste. Serve as a spread on rice cakes, toast or sandwiches or use as a dip. It can also be thinned with a little milk to give it a drizzling consistency, and you could then use it as a salad dressing. Very versatile! :)
Okay, time to assemble our wraps! Smear a little of the tahini sauce down the middle of a tortilla, topping with the cooked haloumi.
Then top with your choice of salads, I used shredded iceberg lettuce, finely sliced Spanish onion, and chopped green olives. The next time I made it I added some grated carrot and it was wonderful too. :)
Then roll up (some tortillas need to be heated before using to be pliable, be sure to check the packet) and munch away!
