Our tree on Christmas Eve
I love celebrating with family but I also like variety, so it was a nice change from a bigger family celebration. Most Christmases we have rolled turkey roast, but this year we went with roast pork for something different. :)
The Christmas lunch spread
I slow roasted the pork on Christmas Eve, then let it rest overnight so it'd be tender and juicy (in the fridge of course!). I just rubbed oil, salt, pepper and a little ground garlic onto the meat before it went into the oven.
It was lovely and moist, even having spent the night in the fridge, and tasted awesome! I separated the skin from the roast the day before, rubbed it with plenty of salt and let it dry in the fridge overnight. Then on Christmas morning I cranked up the oven quite hot and blasted it with some oil and more salt. E voila, crackling!
To go alongside the pork, I made some simple gravy, flavoured with more garlic and some dry sherry.
To keep things easy and relaxed, there was just two side dish - the first being coleslaw. I had mayo all ready to go onto it, but when I checked the ingredients I found it contained gluten (why???) so I had mine dry.
It was just shredded coleslaw, grated carrot and finely sliced red onion, I like it fairly basic, but I would've liked some dressing! The other side was roast potatoes, which my partner cooked to perfection.
They were cooked using Jamie Oliver's tips - ie. par-cooking the potatoes, shaking them in the pot once they're drained to make them fluffy on the outside, and using very hot oil (we heat an oiled tray in the oven before adding the potatoes). They were crunchy, which I love, and fluffy inside with a lovely buttery flavour.
Here's my plate all loaded up, I added some parmesan (a Christmas present, thank you Dear!) to my coleslaw.
Just one final touch...
...a torrent of gravy over my roast pork! Hope you all enjoyed your Christmas munches as much as I did!
I like mixing it up for Christmas too, and how nice that you got to spend one just the two of you :) I have to try making those potatoes, they look great!
ReplyDeleteYou won't regret it :) These are some of the best roast potatoes I've ever had, the fluffy bits on the outside go nice and crisp, as does the skin if you leave it on.
